The dark flecks you see are chia seeds. I use chia seed flour (ground chia seeds) in all of my gluten and allergen free bread and baking mixes. If you open one of my mixes for the first time and see little tiny dark bits, don’t be alarmed, it’s just the chia seeds! Chia seeds are native to Central and South America and were consumed by ancient Aztecs and Mayans for the many medicinal benefits they provide. Chia is power packed with omega-3 fatty acids and antioxidants and are also a good source of fiber, calcium, phosphorous, magnesium, manganese, copper, iron, molybdenum, niacin, and zinc.
