Gluten Free Zucchini Bread Recipe

All of our baking mixes have more than one recipe they can be used with, and our Pumpkin Bread (or banana Bread) mix is a perfect example. It is always a good idea to put more vegetables in your diet and why not also make it a treat!

INGREDIENTS

DIRECTIONS

  1. Preheat oven to 325 degrees.
  2. Grease a 9 x 4 inch loaf pan. 
  3. Blend all ingredients together in a bowl: Breads from Anna Pumpkin or Banana Bread Mix, eggs, oil, cinnamon, and shredded zucchini. Mix until fully combined. 
  4. Pour batter into prepared pan.
  5. Bake for 60 minutes or until a toothpick inserted in the center comes out clean. 
  6. Allow to cool in pan on rack for 20 minutes. Remove from pan, and completely cool. Bread should be room temperature before slicing.

The yeast free bread mix does best in the oven. You can use the yeast free mix as a quick rise flour and use one for one with a quick rise bread recipe. No additional baking soda or powder should be needed.

Can zuchinni bread be made with yeast free bread mix using same recipe that is used with banana bread mix? I am looking for a sugar free yeast free zuchinni bread recipe with stevia as a sweetener
