Gluten-Free Pear Pistachio Muffins

We substituted pears for apples and added pistachios to our Apple Pancake and Muffin Mix for a great sweet and salty flavor combination! 

Yield:  Makes approximately 24 muffins.

Allergen Info:  This recipe is free from gluten, corn, dairy, soy, nuts (including peanuts), yeast and rice.



  1. Peel and quarter 2 pears. Process in food processer until smooth. Dice (small) remaining pear.
  2. In a medium-sized mixing bowl, combine all wet ingredients, including 1 cup processed pears, and lightly beat.
  3. Add mix and blend until well combined.
  4. Toss diced pears with spices, and fold into batter with ½ cup chopped pistachios.
  5. Fill standard (lightly oiled) muffin tins 2/3 full, and sprinkle with remaining pistachios.
  6. Bake at 350 degrees for 20-25 minutes or until center tests clean with a toothpick.
