Gluten Free Mock Rye Bread Recipe

This Mock Rye bread is easy and satisfying.  It will liven up any deli sandwich and create a delicious aroma while baking.  If it is the flavor of Rye bread you are missing as well as a delicious soft texture this is the recipe for you!

Oven Method

Ingredients:

  • 1 package Breads From Anna® Bread Mix (any of the sandwich breads)
  • ½ cup warm water for yeast
  • 1 Tablespoon honey or sugar
  • 1 Tablespoon molasses
  • 1 packet active dry yeast (included with mix)
  • 1 teaspoon lemon zest
  • 1 Tablespoon apple cider vinegar
  • ¼ cup oil
  • 4 whole jumbo eggs at room temperature
  • ½ cup plus 2 tablespoons of warm water or liquid of your choice
  • 2 teaspoons instant coffee
  • 1-teaspoon cardamom
  • 4 teaspoons caraway seeds

Directions:

  1. Preheat oven to 375 degrees and grease 8 ½ x 4-½-loaf pan.
  2. Dissolve honey and molasses in ½ cup warm water and mix in yeast. Set aside until mixture is foamy (5-10 minutes).
  3. In the bowl of a heavy-duty mixer combine eggs, vinegar, oil, lemon peel, and additional ½ cup plus 2 Tablespoons of warm water. Add dry mix, instant coffee, cardamom, and caraway seeds, and blend on low until well combined.  Add yeast mixture.  Gradually increase speed to high and beat for 3-4 minutes.
  4. Spoon into prepared pan. Loosely cover with foil or waxed paper, place in a warm, dry place until dough has doubled in bulk (90-120 minutes).
  5. Uncover and bake for 15 minutes. Loosely cover with foil (prevents overbrowning); bake for an additional 45-50 minutes.
  6. Remove pan from the oven and invert onto a wire rack. Tap the bottom of your loaf.  It should have a hollow sound. If not, bake for 5-minute intervals until it does.  Cool on wire rack for 1 hour.

Bread Machine Method

Combine eggs, honey, molasses, oil, vinegar, lemon zest, and 1 cup plus 2 Tablespoons warm water or liquid of choice and place in bread machine pan.  Sprinkle dry mix, instant coffee, cardamom, and caraway seeds over top of wet ingredients.  Sprinkle yeast over top and start cycle.  Remove bread immediately after cycle is complete.

Was wondering if this could be made with the yeast free bread mix? If so, any recommended alterations?

Yummy, can’t wait to try this recipe. I have been waiting for a while! Rye was always my favorite; and with Anna’s bread mix it will make it even better.
