Gluten Free Monkey Bread Recipe

Whether you are treating the kids to a special breakfast on the last day of school or preparing brunch for summer house guests, our Gluten Free Monkey Bread recipe is sure to please, as it fills your kitchen with the smell and taste of cinnamon goodness!

Yield is one 8 or 9x4 loaf pan (standard sized loaf pan)

Ingredients:
  • 1 ¾ cup Breads from Anna ® Pizza Crust Mix (½ of package)
  • 1 package yeast
  • 2 teaspoons cinnamon
  • 1/3 cup water
  • 2 eggs
  • 3 Tablespoons maple syrup
  • 2 Tablespoons oil
  • 1 teaspoon vanilla

 for the coating:

  • 6 Tablespoons butter or non-dairy alternative
  • 4 Tablespoons organic cane sugar
  • 2 Tablespoons maple syrup
  • 1 teaspoon cinnamon

Directions:

  1. Preheat oven to 350 degrees. Place mix, including yeast, into the bowl of a heavy-duty mixer. Blend on low speed for 3 minutes, gradually adding warm water, maple syrup, oil, vanilla, and eggs. Slowly increase mixer speed to high. Beat for 7-8 minutes, scraping sides of bowl.
  2. Oil a 9x4 inch bread pan or 9 inch round pan.
  3. Melt butter over medium low heat. Add sugar and cook and stir slowly until dissolved and slightly thickened, approximately 2 minutes. Add maple syrup and cinnamon and continue stirring and cooking 2 minutes more. Remove from heat.
  4. Using two spoons, shape dough into a 1-inch ball, and drop into coating mixture. Stir gently to coat.  Remove ball with spoon and place in bread pan. Repeat, placing balls of dough next to each other, but barely touching, staggering them in the bottom of the bread pan. When the bottom of the pan is covered, spoon a little more coating over the dough balls. Continue scooping dough into a second layer, until all dough is in the pan. Pour remaining coating over all.  Cover loosely and let dough rise for 45 minutes or until doubled in size.
  5. Bake for 20-25 minutes.
