Grilled Gluten-Free Pesto Chicken Pizza (nut-free) Recipe

  • Prepared Pizza Crust (or grilled!)
  • Pesto – see recipe below or use your favorite purchased pesto
  • 2 cups cooked, chopped chicken (may be grilled for added flavor)
  • 2 cups sliced tomatoes
  • 8 oz. fresh sliced mozzarella or crumbled feta cheese
INSTRUCTIONS: Spread pizza crust with a thin layer of pesto. Top with chicken, tomatoes, and mozzarella or feta cheese.

Pesto recipe:
  • 4 cups loosely packed fresh basil leaves or 2 cups basil and 2 cups spinach leaves
  • 2-3 garlic cloves
  • ½ cup avocado or olive oil
  • Salt and pepper to taste
  • ½ cup Parmesan cheese 
  • ¼ cup toasted pine nuts or walnuts (optional)
Combine all ingredients in a food processor; process until smooth. If you have extra pesto remaining at the end of the party, it can be frozen in ice cube trays, then removed from trays and stored in a freezer bag for up to six months.
