Pesto – see recipe below or use your favorite purchased pesto
2 cups cooked, chopped chicken (may be grilled for added flavor)
2 cups sliced tomatoes
8 oz. fresh sliced mozzarella or crumbled feta cheese
INSTRUCTIONS: Spread pizza crust with a thin layer of pesto. Top with chicken, tomatoes, and mozzarella or feta cheese.
4 cups loosely packed fresh basil leaves or 2 cups basil and 2 cups spinach leaves
2-3 garlic cloves
½ cup avocado or olive oil
Salt and pepper to taste
½ cup Parmesan cheese
¼ cup toasted pine nuts or walnuts (optional)
Combine all ingredients in a food processor; process until smooth. If you have extra pesto remaining at the end of the party, it can be frozen in ice cube trays, then removed from trays and stored in a freezer bag for up to six months.
