Gluten-Free Roasted Red Pepper Dip Recipe

INGREDIENTS:
  • 1 cup roasted red bell peppers (approximately 2 peppers, see note below)
  • 1 thick slice Breads from Anna Classic Herb Bread, made into crumbs (approximately ½ cup bread crumbs)
  • 2-3 garlic cloves
  • 1 tablespoon avocado oil (or oil of your choice)
  • 1 tablespoon balsamic vinegar
  • ½ teaspoon cayenne pepper
  • 2 tablespoons toasted almonds (optional)
  • 2 tablespoons grated Parmesan cheese (optional)
DIRECTIONS:

Roasting peppers: Preheat oven to 450 degrees. Cut peppers into quarters lengthwise and remove stem and seeds. Place cut side down on lightly oiled baking sheet, and bake until skin blisters and turns black, approximately 20 minutes (may also be broiled for 3-5 minutes).  Remove and place peppers in plastic bag. Seal and let steam for 10-15 minutes. Remove from bag and peel away skin.

Combine all ingredients in a food processor; process until smooth. Cover and chill. Serve with Breads from Anna Pita Chips
