Gluten-Free Maple Pancakes with Mixed Berries Recipe



  • 1 package Breads from Anna® Gluten-Free Maple Pancake & Muffin Mix
  • 2 jumbo eggs
  • ¾ - 2 cups milk or non-dairy drink (see below for adjusted liquid amounts)
  • ⅓ cup oil
  • 2-3 cups fruit (fresh or frozen, see below)
  • 1 teaspoon vanilla (optional)
  • 3 tablespoons maple syrup (optional)


  1. Follow package instructions to make the pancakes from Breads from Anna Gluten-Free Maple Pancake & Muffin Mix.
  2. Add 2 -3 cups fruit (fresh or frozen).
  3. If using fresh fruit use 2 cups liquid, if using frozen fruit use 1 ¾ cup (frozen fruit will have more moisture).
  4. Add fruit to batter and cook the pancakes following the package instructions.
These pancakes are especially delicious topped with Greek yogurt.
